...with vegan chef Charlie Cunningham

If you were lucky enough to have tried the falafel wrap with homemade sauce at the Marché's vegan counter, you should know how it came to be. Charlie's recipe originated back in the day, with a little inspiration from Grateful Dead concerts.

[in his words]:

"Just going and hanging out in the parking lot wasn't that much fun, so I decided that I would get a flat top grill. My girlfriend and I came up with ideas for cooking. We did pancakes in the morning, and the falafels at night, which were very successful."

"I became a vegetarian because of moral choices. I could not disassociate meat with where it came from. That was the main reason for me to start cooking, was in order to get food that I like, I had to make it myself."

"The karma is very good [here]. I've done a lot of other things for a living and I never felt very good about those jobs. Although I was making more money, at the end of the day, I looked at what I had accomplished, and it wasn't on the same scale. So I feel very lucky to have the job I have right now."
